We are kicking things off today with how to make a GOURMET GRILLED CHEESE.
You need to have some essentials on hand. Slice up your boule loaf using a good quality bread knife and then spread butter liberally on (one side of) each slice, paying close attention to the crusty outer edges. A full and even cloak of butter — generously applied — is essential to achieving a crisp and worthwhile grill cheese. Then, cover the other side of one slice in Dijon Mustard. Layer on medium slices of Cheddar Cheese and top with thinly sliced Granny Smith Apple. This warm and tangy combination is spectacular.
For the next sandwich, the bread interior gets a blanket of thick Fig Jam and a playful cheese pairing — perhaps a creamy Brie or a firm, musty Gruyere. If you’re feeling frisky, crisp up some bacon and layer it over the cheese.
Where I am going with this is — kitchen sink creativity with whatever cheese, fruits, vegetables and spreads you have on hand. Invite some caramelized onions to mingle with the brie. Mushrooms can saddle up in between the bacon + gruyere. Or go ahead with a classic — slices of juicy Tomato + American Cheese.
HexClad is all time — my favorite cookware because it’s hybrid and stands up well to a gas stove. A griddle is an ideal pan in this scenario. I like to assemble my sandwiches directly on the griddle and then turn on the heat. Cook the grilled cheeses low and slow allowing the cheese enough time to properly melt. A heavy grill press is a nice-to-have tool here.
When your GGCs (Gourmet Grilled Cheeses) are toasty and crisp, transfer them to a cutting board. Immediately add the piece de résistance to raise them up: flaky sea salt. Sprinkle a light pinch of coarse flakes right over the top. They will ease into the crevices of the bread.
Let them cool for a moment, then slice diagonally in half with the bread knife. Split up the halves among you and enjoy the different combos!

We are moving right along into an ASTROLOGY CHART READING
I recently joined forces with the gifted and talented
— She read my astrological chart and I dove in on everything she picked up. Kaitlyn and I did not know each other previously, everything from her reading was knowing very little about me personally prior to it. Anyone reading your birth chart will collect three key pieces of information: birthday, birth time, and place of birth.Since we connected through
it felt intuitive as our energies and writing styles blended for this back and forth. I hope you will give it a read! If you are into exploring life experiences through the lens of astrology, definitely subscribe to her newsletter.A little more background: My Mom gifted me a natal chart reading as a birthday present about 13 (?) years ago. It was insightful from a growth perspective — a “this is now hanging out in the back of my mind” kind of way. As everyone understands at a basic level, channeled through astrology are certain elements and characteristics about you that are fixed. A chart reading goes much deeper in terms of getting to know. It is one tool for understanding how you move through life, how you experience, why things might go a certain way, how you connect with others, how they see you, to name a few. It can be encouraging and enlightening. And fun!
Your birth chart looks at not only where the sun was when you were born (your zodiac sign) but the entire sky to determine your rising sign and your moon sign. Together they form your Astrological Big Three. Among that, there is nuanced intel such as how the planets occupy your chart or are moving through it currently. At the time of my first reading, and upon reflection, it helped me make sense of so much! Same with my present day reading.
Anyone can give an eye roll as I carry on about where the sun and the moon were when you were born, the energy of the planets (!!) but think for a minute about them. The Sun, the Moon, the Earth, Jupiter, Saturn, etc: these are massive heavenly bodies. For me it all carries meaning. It exudes clarity. It grasps truth. It will never tell the full story because life is always unfolding and individually you hold autonomy.
It is a guide to exploring who we are, but ultimately you choose how to show up as your unique and authentic self. You get to show your intent to the universe.

Your grilled cheese talk has me drooling over here!!! I've never thought to put apple in the mix, but I'm definitely giving it a try because it sounds delicious. And the flaky sea salt... I'm sold!
I also loved reading your words on our astro experience together—thank you for trusting me and for the kind feedback!! It was a blast to get to know you through your chart. Your son's interest in the stars has me smiling too, and I'm reflecting on one of my childhood bedrooms that had those glow in the dark stars on the ceiling fan—they were my favourite part of that room, oh how life came full circle ✨
